And if you're wondering if these were good or not, let me tell you oh boy were they! And I mean, they were really, truly incredible.
Now if your quite familiar with Novelstyle you would have cleverly noticed that I flattened these cookies, rather than shaping them into perfectly petite sized walnut pieces. Truth be told, I didn't exactly have the literal condiments needed that her original recipe called for. And since I wouldn't allow a few stubborn shortages to deter me from preparing these, I improvised.
The root of my problem happened to be some troublesome coconut pieces. Turns out I just didn't have enough of the desiccated stuff on hand. So I impulsively added some shredded coconut I found laying about in the pantry. I wasn't too concerned though since I presumed some chunky pieces laced throughout would only serve to add texture.
Luckily for me the Kitchen Gods were in my favor. All of these changes could have proven disastrous, especially considering biscuits and the like are not my forte (I just don't like getting my hands dirty, you know). And those who've been reading this blog for some time now would probably be wondering what the hell was this b*** thinking changing s***? So to answer that question lovers, who the hell knows? Weird s*** goes through my mind when I'm in that kitchen and that day I was apparently being all "chef-y" and pretentious. I also (very poorly) added some decorative large sugar crystals and shredded coconut to their tops before cramming them into the oven. Fortunately the crystals ended up contributing a nice crunch. And the coconut, well the majority of them annoyingly went and got themselves slightly burnt. Which was, completely not my fault. But thankfully the subtle sweetness of the coconut within the biscuit itself dazzled, rendering those orange buggers palatably insignificant.
A big thank you to Ileana for sharing these with us. And if you've enjoyed visually devouring these make sure you go and view the original recipe here on Novelstyle.

Coconut is my favourite flavour and these cookies look delicious. i'm sure that they also are

ReplyDeleteIt's great that you used what you could and improvised - I think they turned out great and you made them your own instead of being completely the same! :)
Nom nom nom.... I'm not kidding, my tummy literally just grumbled!!
Wish I could bake.... but that would be the worst idea / disaster in the world.
www.bohemianmuses.blogspot.com
Hahahaha! These are pretty easy to follow though Jade, and you don't have to be fancy and flatten them and add sugar crystals and stuff like I did. Just mix then roll into balls then in the oven. Though the challenge may just be the oven part. Trying to get them to bake just right. xx
DeleteThey look great, even for improvising! :)

These coconut cookies look divine, dear Sonia...but I have so many dietary restrictions, and would have to substitute so many of the ingredients, that they would hardly be the same cookie anymore (if even a cookie at all!!) So I will have to be satisfied with admiring your lovely photos!! ;)

i have a soft spot for anything coconut, especially desiccated coconut ;) yeah it's tricky to swap things out, i remember once working with coconut flour because i had this weird idea that i was going to make asian macarons by subbing out half of the almond meal haha. it was disastrous! took me 4 tries to get it right so you did really well!
ReplyDeletesteph / absolutely-fuzzy.com
Hahahaha well I was probably being a tad dramatic there Steph, it wasn't exactly rocket science substituting coconut for shreds etc... xx
DeleteHi Sonia! Im so glad to see a recipe post from you, you know how much love them! And you have been very good at making the Ileana's cookies, I remember her recipe and I thought it was so delicious! DeleteYes I hear biscuits are hard to make. These turned out great. I made cookie cutter cookies this past holiday for the first time and they turned out great. I will have to take a stab at these come the cooler weather.
ReplyDeleteHaha fake cursing. Funny I was just thinking about this other night. How I am basically the same person I was at 15. I am older and wiser and yes went through same "phases" but who I am is more or less the same. Where as my sister at 15 was anti-gay typical of her peers and age and she was in to a religious trip at the. Then after a decade of that she is now in to "The Secret" belief system which she takes too literally. And of course she is no longer anti gay. But I never had major changes really to the core of who I am.

This post could effectively be named "DaringCoConut". To be honest, I do not quite like dessicated coconut stuff at all. Yeah that's so weird being an Asian and surrounded with many dessicated cocobut pastries and Malay kuehs. I think that adding pieces of shredded coconut is a good move coz I've tasted muffins using shreds and they taste better than dessicated. I like how accidents lead to discoveries!
