I seem to almost always come across tempting little seductresses like this online. And I've decided to make this a regular occurrence, and thus now dubbing my Thursdays; "Food Porn Thursday's" 

This bad boy, right here is definitely food porn! And who doesn't like food anyway? And this way we can enjoy this guilty pleasures by simply drooling over our keyboards - but heck who am I kidding! I'll probably be making this over the weekend LOL!


Christmas parties. It's either something we enjoy attending or something we just plain dread for many reasons. Well yesterday I attended my first Christmas party for the season, it was hosted by one of my dear friends at their new apartment and it came with some prerequisites; bring a plate of food, bottle of something and a gift under $20 for a kris kringle. I have to admit out of the three the gift was the hardest to get! Trying to find a unisex gift under $20 that isn't lame is pretty hard to get a hold of! After much debate I ended up settling for a set of Havaiana magnets over novelty cocktail shaker thingy.

Once that was settled I got a move onto the food, and once again made life that little bit more difficult by deciding to bake some coconut cherry macaroons over buying them from Safeway! The recipe is straight forward and really easy (and messy!) and in no time they where ready. My problem? The quantity. I didn't exactly read the recipe properly and only ended up with a dozen! And of course running out of coconut meant I could not make more. The solution? Bake something else lol, and since it's the silly season I remembered a cherry butter cake my mother used to make when I was little and since I virtually had a whole packet of glace cherries left over that kind of sealed the deal!

So crises averted! The cake turned out well, I ended up icing it too and was just a teeny bit late to the party! But it seemed to be a hit, especially the macaroons. And my gift wasn't really that lame either! Turns out my kris kringle Jason thought they where hilarious!

If your in need of some holiday inspiration of just feeling a little inspired to bake here is the recipe:

Coconut Cherry Macaroons 
Makes: 12

  • 1 cup desiccated coconut
  • 1/4 cup caster sugar
  • 1 egg white
  • 2 tbs glace cherries, roughly chopped
  • 2 drops vanilla essence

Preheat oven to 180°C.

Combine desiccated coconut, caster sugar, egg white, cherries and rosewater essence in a bowl. Roll spoonfuls of mixture into walnut-sized balls, and place on a baking tray lined with baking paper.

Bake for 10-12 minutes or until crisp and slightly golden on the outside.

I've spent the majority of the day today baking these Strawberry Cheesecake muffins, and am so proud with how they turned out! 

Let me start by stating that I'm one of those people who like to cook, but dislike the cleaning part after it and I hate to admit it but I'm probably the messiest person in the kitchen too. I almost always end up using every single spoon and utensil available to me (hence the cleanup!). And I am also one of those cooks whose creation is either delicious, five-star, chef worthy quality or bland and not fit for consuming! But since these are actually for a friend of mine I'm seeing later on the day who isn't feeling too well I wanted to avert any possible disasters! 

So I ended putting all my love and energy into these lovlies. I made sure I had good quality ingredients, the measurements where spot on, the consistency was perfect and I painfully spent quite a while measuring and perfecting the quantity of batter per case! I even splashed out and got some fancy decorations to adorn them with after and you know what they turned out amazing! Feeling very proud of my lovlies and after sampling one and getting my mother's approval; SUCCESS! They are not only edible and delicious but they look great too! Yay!
