Suffice to say, the two combined are perfectly delicious.
Now I know what you're thinking.
"Didn't that crazy bitch just say she hates chocolate and coconut combined?"
Yes friends I did say that but I was referring to the confectioner kind. Plus this recipe calls for cocoa powder and not the solid or melted kind so it's completely different. And there is a thick layer of raspberry jam in the middle. And raspberry combined with chocolate trumps anything, on any given day.
And for those of you with a keen eye you would have noticed that there is indeed a lack of coconut flakes dancing atop of said slice. Yes there are no flakes per se, just the shredded variety as I can't seem to find them. Correction, I do find them sporadically but when I actually need them, they always bloody vanish. Does anybody else have this problem? Or like most bizarre things, is it just me?
////////////////////////////////////////////////////////
[ For the base ]
126g butter
1 egg, lightly whisked
1/4 cup cocoa powder
1/4 cup plain flour
1/2 cup raspberry jam
[ For the coconut ]
2 eggs, lightly whisked
3/4 cup caster sugar
3/4 cup plain flour
3/4 cup desiccated coconut
1/2 cup flaked coconut
Preheat oven to 180°C / 350°F and line a small square cake pan with baking paper.
Beat butter and sugar until pale and creamy.
Add the egg and beat until incorporated fully.
Mix in the cocoa and flour and once combined spread into the cake pan, making sure to smooth the surface flat.
Bake for around 10 minutes or until firm then set aside to cool.
For the coconut whisk the eggs and sugar in a large bowl.
Add flour and desiccated coconut and mix until well combined.
Back to the cake pan, spread a layer of jam on the base, making sure to cover the entire surface equally.
Spoon the coconut mixture on top of the raspberry jam and once smooth sprinkle with flaked coconut.
Bake for around 30 minutes or until golden brown and cooked through.
To serve simply cut into squares.
Et voila.

I don't even know how you do it, but your baking makes me want to hire you as my personal baker (and I'm not even so big on sweets and pastries I would ever need one)! This just looks amazing. Delish. I'm loving the photos and how you wrote the recipe on one, looks so neat :)

haha, I can totally relate to the love/hate with coconut. I love the flavor, but I can't just eat little chunks of it like they sell in the produce section. And lol about the chocolate and coconut combo! These really do look delicious and I wish my sister was around to make them for me, she loves to bake! hehe

This looks utterly delicious, Sonia! The photography is fantastic and the food itself looks so tasty. Funnily enough, as much as I drool over coconut, I don't often eat it.. I think that may have more to do with my location than my personal taste though! :) I hope your weekend is going well and that you're feeling a little better now. My flu seems to be subsiding now, although emphasis is on the 'seems' haha.

Hi Sonia:)
ReplyDeleteI too have a love/hate relationship with coconut but it's a bit different than yours. I don't know if you have Mounds or Almond Joy bars in Australia but we do have them here and I LOVE them. Ironically though I dislike Chocolate and Coconut on, in or together any other way. Go figure!!!
However, as you mentioned, cocoa is a whole new horse of a different color. Cocoa, raspberry AND coconut, yes, yes!!! I can definitely relate. You make it look so beautiful though, and make it sound so easy, I may just want to oogle it for a while before contemplating the though of how to eat it. Devour or nibble???
Thank you so much for sharing, Sonia...I may dream about these bars tonight:)
No we don't have them here but I am aware of them, more by name than actual contents though. Sweet dreams Louise xx

DeleteHello Sonia, it sure sounds like we are on the same page when it comes to coconut. I LURVE coconut drink. Like those really refreshing ones from the coconut shell with soft translucent whitish flesh and drunk with a straw. I absolutely lurve those. I'm on the fence with coconut milk. I like them in some desserts and not quite so in others. And I absolutely dislike dessicated coconut. But there was once I ate a muffin and found the crispy part really delicious, to which the storeowner told me that's coconut and it looks just like what I see here. some coconut flakes on top and they do add some crazy nice texture to the whole cake. In fact, your raspberry coconut slice looks really delicious and I wouldn't even think the coconut would make it as bad as those coconut we dislike. The fruity tang makes a lot of difference too!

Gosh these look so yummy! I am literally useless at baking though - I'm not joking when I say that today I failed at making rice crispy cakes... you know where you melt chocolate and combine them with the breakfast cereal? Yup, I ruined them. xx
